Chef José Allen prepares this classic recipe from Panamanian cuisine, also known as "Gallo Pinto" in the Coclé region. Guacho is a rice-based dish, most commonly prepared with beans and pig's tail. However, there are many regional varieties, including: Seafood Guacho, Pigeon Pea Guacho, Crab Guacho, Black Shell Guacho, and the classic Gallo Pinto with Chiriquí Beans and Pig's Tail.
